This lunch has everything going for it: easy to make, kid-friendly, nutrient rich, and at most delicious.
In primary school, my lunch was traditionally a mediocre sandwich, a muesli bar, a piece of fruit and a chocolate. Very boring, eh? As high school came around, I often went down the road to the local shops and picked up some take away instead of packing a lunch. My excuse was that I was studying all the time, but in reality I was just lazy. These days, parents strive to pack nutritious lunches to satisfy their children’s hunger while keeping time conscious.
This fantastic chicken wrap takes less than 10 minutes to make, provides 2 serves of vegetables, 1 serving of meat and 1 serve of whole grain. It is great along side a small tub of natural yoghurt, crackers and cheese, fresh fruit, vegetable sticks and hummus, homemade muesli bars or popcorn. - 1 wholemeal wrap
- 3 slices grilled chicken breast
- 1 tbsp whole egg mayonnaise or avocado
- 1/2 tomato, sliced
- 1/2 carrot, shredded
- 1/2 cup cos lettuce, ripped
- 2 sprigs chives
- Fill wrap with ingredients and roll
- Place the lettuce closest to the wrap to prevent the wrap from becoming soggy
